Farmers meticulously tend the saffron fields, which are specially dedicated to the cultivation of saffron. The bright purple petals of the crocus sativus are delicately hand-picked in the morning, while the flowers are still closed. Once harvested, the precious red pistils, called stigmas, are delicately extracted from the flowers. Harvesting saffron is a painstaking task requiring great dexterity, as thousands of flowers have to be handled to obtain a small quantity of saffron!
